Spicy Indian Soup with Mexican Rice

I probably search the internet for "lentil soup recipes" once a month.   My searches always lead me to this Rajat Parr recipe.  After years (literally) of looking, debating, and pinning I made the black lentil soup.  To make this dinner extra filling, I made a pot of Rick Bayless' rice sans plantains.  I originally made this Mexican white rice with these enchiladas but why can't Indian and Mexican go together?

Gluten-Free Peanut Butter and Chocolate Pie

Major things happened this week. ONE: I traded in my 14 year old Explorer aka The Beast.  My heart may have broke a little.  For real.  TWO: I made a No-Bake Cream Cheese Peanut Butter Pie.  THREE: I tried boxed Gluten Free Focaccia mix.  Let's talk about number two.
