A Lunch Challenge

Inspired by this post from Peanut Butter Runner, I'm aiming to create interesting go-to lunches.  I usually make some dish (think salad or soup) on the weekend and then repurpose it throughout the week for lunch.  This usually lasts until Wednesday.  On Thursday and Friday I debate between the kale and curry from the Chinese cafeteria, a veggie taco from Willy's or Chick-fil-a fries and a yogurt parfait if I'm desperate.  Not in the coming days.  Here's what I'm working with:
  • Rice
  • Quinoa
  • Lentils
  • Chickpeas
  • Pasta
I'm starting with a fav - fried rice.  Since trying a curry recipe the first time last Summer, I improved the recipe.  Details coming soon.
